Does a bread knife made 100% out of bamboo need to be toveled? (It's real knife, very sharp, and the blade is resharpened by sanding.)

The laws of immersing vessels which were acquired from a non-Jew before being allowed to use them ("tovelling") comes from the Book of Bamidbar in parshat Matot (Bamidbar 31: 21-23). After Am Yisrael went to war against Midyan, they took spoils from the enemy. Then they are told that those vessels made of "Gold and silver, copper, iron, tin and lead…they must be 'cleansed' with waters of lustration (mai nidah).".
From this verse we learn that only metal vessels need. From this verse we learn that only metal vessels need to be tovelled. Later in Jewish history the rabbis added glass vessels to the list. From this we can see that wooden vessels – such as your bamboo knife – do not require tovelling, and may be used without going into the mikvah.
